Sparkling wine is made in three main ways: Méthode Traditionnelle, where the second fermentation happens in the bottle; the Charmat or tank method, where it happens in a pressurised tank; and forced carbonation, where carbon dioxide is added directly to still wine. Each method influences the wine’s bubbles, texture, freshness and overall style.
From Champagne to Modern Sparkling Wine
When we think of sparkling wine, Champagne is often the first name that comes to mind. For generations, it has been associated with celebrations, weddings and special occasions.
But sparkling wine is much bigger than Champagne.
Cava, Crémant, Prosecco, Sekt, Lambrusco and other sparkling wines are produced around the world, using different grapes, regions and production techniques.
Interestingly, bubbles were not always considered desirable. Early winemakers often saw unexpected effervescence as a fault, and pressurised bottles could even be dangerous to handle. Over time, winemakers learned how to control the process—and sparkling wine became the celebration we know today.
So, how is sparkling wine actually made?
There are three major production methods to know.
1. Méthode Traditionnelle: Second Fermentation in the Bottle
The Méthode Traditionnelle, also called the traditional method, is the technique most famously associated with Champagne. It is also used for Cava, Crémant, Sekt, Italian Metodo Classico and South Africa’s Méthode Cap Classique.
The process begins with an early harvest to preserve acidity. The grapes are pressed and fermented into a dry, relatively low-alcohol base wine. Different base wines may then be blended through assemblage to create the desired cuvée.
Next comes tirage. Yeast and sugar are added before the wine is bottled, triggering a second fermentation inside the bottle. The resulting carbon dioxide is trapped, creating the bubbles.
The wine then spends time ageing on its lees—the spent yeast cells left after fermentation. This process can contribute to the creamy texture and distinctive biscuit, brioche and toasty flavours associated with traditionally made sparkling wines.
During remuage, or riddling, the yeast sediment is gradually moved towards the neck of the bottle. The sediment is then removed through disgorgement, before dosage is added to adjust the final sweetness. The bottle is corked, wired and labelled.
The result: fine bubbles, greater texture and complexity, often with layers of pastry, toast and creamy flavours.
2. Charmat Method: Freshness in the Tank
The Charmat method, also known as the tank method, takes a different approach.
Instead of carrying out the second fermentation inside each bottle, the wine undergoes secondary fermentation in a sealed, pressurised stainless-steel tank.
This method is generally faster, more efficient and less labour-intensive than the traditional method. Because the wine typically spends less time ageing with yeast lees, the style tends to emphasise fresh fruit, floral character and vibrant acidity rather than pronounced toasty flavours.
Prosecco is one of the best-known examples, while some Asti and Lambrusco styles are also produced using tank fermentation.
The result: fresh, aromatic, fruit-driven sparkling wine with lively bubbles.
3. Forced Carbonation: Adding the Bubbles
The simplest and fastest method is forced carbonation.
Rather than creating carbon dioxide through a second fermentation, carbon dioxide is directly added to a finished still wine under pressure.
It is similar in principle to carbonating a soft drink.
This method is commonly associated with inexpensive, high-volume production because it requires less time and labour. The bubbles can also feel larger and less integrated compared with sparkling wines made through fermentation.
The result: straightforward, highly accessible sparkling wine designed around freshness and immediate consumption.

Why Does the Production Method Matter?
The production method is more than a technical detail—it influences the way a sparkling wine tastes and feels.
